Delicious recipe ideas for May Day Bank Holiday

With the May Day Bank Holiday approaching, it’s the perfect opportunity to gather your loves ones and unwind in the (hopefully sunny) garden. That’s why we’ve rounded up these delicious recipes, are perfect for a springtime feast. From succulent slow-roasted lamb to crowd-pleasing classics, there's something here for everyone to enjoy. Lemon and herb couscous

If you’re looking for a quick and tasty side dish to accompany your May Day feast, this lemon and herb couscous is a brilliant choice. Start by placing 200g of couscous in a large bowl and add a pinch of salt. Pour over 300ml of boiling vegetable stock, cover with a plate or cling film, and let it sit for 5 minutes. Fluff it up with a fork, then stir through the zest and juice of one lemon, a drizzle of olive oil, and a generous handful of chopped fresh herbsparsley, mint, and coriander all work well. For extra flavour, you can add finely chopped spring onions, diced cucumber, or a handful of pomegranate seeds. It’s fresh, vibrant, and ready in minutes. 

Homemade sausage rolls 

These picnic essentials couldn’t be easier to make! Simply take our quality breakfast sausages and wrap in puff pastry, brush with egg yolk, then and bake until both golden and cooked through. If you want to try spicing up this classic, why not remove the sausage meat from the casing, add to a bowl, and combine with whatever seasonings take your fancy? You could try warming spices such as cumin and paprika, fresh herbs, or aromatics. Simply form the seasoned sausage meat into cylinders and bake in the pastry! 

Slow-roasted lamb leg 

Looking for something in the evening? This leg of lamb recipe is a showstopper that takes minimal effort but delivers maximum flavour and works even better when served with buttery new potatoes and green beans. First, rub the lamb with garlic, rosemary, cumin, lemon juice, and olive oil, then roast low and slow for around 4 hours, or until the meat is falling off the bone. Make sure you let it rest for a while before serving! The roasting juices are also the perfect base for making a rich, tasty gravy.
