Get in the mood for warm weather with these 3 recipes
We’ve been enjoying a run of nice weather the past weeks in Manchester,
and it looks like it’s settled in ready for the summer months ahead. With that
said, there’s no better way to get in the mood for some lovely weather ahead
than by shaking up your meal plans with some light, summer-inspired recipes –
and we’ve got a treat with you with three recipes: one for dinner, tea, and dessert
(aka any time of day!).
Lunch recipe – Roasted Mediterranean vegetable couscous
For a lighter dinner option or a delicious side dish that’s
great to serve up alongside a BBQ, look no further than our roasted
Mediterranean vegetable couscous. Packed with vibrant veggies and fragrant
herbs, this dish will have you reminded of your last summer holiday! A drizzle
of quality olive oil is what can truly bring the recipe to life. Our Kalamata
first pressed extra virgin olive oil sourced from the Aetos Estate in
Greece will bring a superior flavour to the dish.
Dinner recipe – Spicy steamed cod with ginger and spring onions recipe
Kick off your weekend with a burst of flavour with this
springy, Asian-inspired dish. The combination of spicy flavours, fresh
cod, ginger and spring
onions creates a dish that’s light yet satisfying. Cod loin is packed with
omega-3 fatty acids which makes it a super heart-healthy choice for the protein
on your plate, and our Scottish
chunky cod loin has been expertly prepared by our local fishmonger so you
can really taste the difference. You’ll want to use an extra
virgin olive oil that’s infused with dried chilli flakes to make sure your
fish is smothered in spice!
Dessert recipe – Panna cotta strawberry, lemon and chocolate
With winter behind us, so too are sticky toffee puddings and
apple crumbles, and it’s in with lighter desserts like panna cotta. Our recipe
makes use of Longley
Farm’s single cream, a yummy product from the Jersey herds of the
Yorkshire-based dairy company. We’ve created the recipe with three tempting
toppings to choose from – strawberry, chocolate or lemon – so you can customise
the dessert depending on what you (or the guests you’re serving) fancy!
