Before diving into the recipe, let’s gather the essential equipment needed for making ice cream at home. You’ll need an ice cream maker to churn the mixture, along with mixing bowls, a whisk and a spatula.

Now, let’s talk ingredients! For the creamiest results, you’ll want to use whole milk. You can also substitute another kind of milk or plant-based alternative, but your ice cream won’t be as creamy. Low fat milks can be used but they tend to create more of a crystal ice texture that has a weaker milky flavour – so it creates more of an “ice milk” than “ice cream”. You’ll also need sugar and vanilla extract to add sweetness and flavour.

Classic homemade vanilla ice cream recipe

Vanilla is a timeless classic that can be enjoyed as is or enhanced with various mix-ins like chocolate, strawberry and mint (which can be thrown in when your ice cream’s churning or in the original mix – so get creative!). Here’s what you’ll need for a versatile vanilla base and the instructions. The prep time is simple and can take just 10 minutes but be prepared to leave plenty of time for freezing the mixture!

Instructions

If you’re using an ice cream maker, prepare the machine according to the instructions provided in the package. Note that different machines may have different requirements. Some ice cream makers may require you to freeze the bowl beforehand, while others may need ice and rock salt.

  1. Combine the whole milk, double cream, sugar and vanilla extract in a mixing bowl until the sugar is dissolved, and the mixture is smooth.
  2. When you’re ready to make the ice cream, pour the mixture into the bowl of your ice cream maker. Follow the instructions specific to your machine.
  3. Turn on the machine and let it churn until the mixture reaches a consistency similar to frozen yogurt. This usually takes about 25 minutes, but it may vary depending on your machine.
  4. Once the ice cream is ready, transfer it to an airtight container and store it in the freezer. Allow it to harden in the freezer for at least 4 hours for a firm, scoopable consistency.
