How to cook the perfect roast turkey

The centrepiece of any festive feast, a perfectly roasted turkey is a Christmas staple in homes all over the country.

Follow these tips and tricks to ensure your turkey is juicy, flavourful, and the star of the show.

1. Choose the right turkey

Start with a high-quality bird for the best flavour. A fresh, locally sourced turkey from a trusted butcher, like our friends at Didsbury’s Little Pigs, ensures premium taste and quality.

2. Preparation is key

Thaw your turkey: If frozen, allow the turkey to defrost completely in the fridge. Allow 24 hours for every 2kg of weight.

Season generously: Rub the turkey inside and out with softened butter, salt, and pepper. Add herbs like rosemary, thyme, and sage under the skin for extra flavour.

3. The roast

Preheat the oven: Set your oven to 180°C (fan) or 200°C (conventional).

Cover and roast: Place the turkey in a roasting pan, breast-side up. Cover with foil to lock in moisture and remove it in the last 30-40 minutes to allow the skin to crisp up.

Cook to perfection: The cooking time varies depending on size. We’d recommend approximately 20 minutes per kilogram, plus an additional 90 minutes for a turkey crown.

4. Use a meat thermometer

A thermometer takes the guesswork out of roasting. Insert it into the thickest part of the breast - it should read 75°C when done.

5. Rest before carving

This is a key step that many people miss! Once out of the oven, cover the turkey loosely with foil and let it rest for at least 30 minutes. This allows the juices to redistribute, making the meat tender and juicy.

6. Serve with style

Pair your turkey with all the classic trimmings, seasonal roasted vegetables, crispy potatoes, and rich gravy.
