Using up your Easter leftovers

I think we can all agree that the best part of Easter Sunday is the roast! If you’re anything like us, though, you’ve probably ended up with a fridge full of leftovers and no idea what to do with them. That’s why we’ve come up with a few tasty ideas to help you clear out the fridge and make the most of all that flavour.


Lamb gyros

One of our favourite elements of an Easter lunch is the delicious roast lamb. If you’re wondering how to use up the leftovers, why not repurpose them into a simple, Greek-inspired lamb gyro? Simply slice your leftover roast lamb, gently warm it through in any remaining gravy, and serve it inside flatbreads or pittas with a spoonful of tzatziki, shredded lettuce, chopped tomatoes, coriander, red onion, and even a few chips! It’s a fresh, light way to turn leftovers into a delicious lunch, or perfect for a midweek tea.


Chicken pie

If you opted for chicken this year, why not turn the leftover meat into a comforting chicken pie? Start by frying off some bacon or lardons in a large pan. Remove once browned, then gently soften onions, leeks, and garlic in the remaining fat. Once softened, add a glass of white wine, about 500ml of chicken stock, and two tablespoons of double cream. Stir in your leftover chicken, along with any cooked veg you might have, such as carrots or peas. Add a handful of chopped parsley and the zest of half a lemon, then pour into a baking dish.

Once cooled slightly, top with puff pastry and brush with an egg wash, then bake until golden. It’s a true family classic, packed with all the comforting flavours of a roast.


Bubble & squeak

This Christmas classic works all year round! It’s the perfect way to use up leftover roast potatoes, cabbage, onions, and any other vegetables. Simply chop your leftover veg, mash it all together lightly, shape into small patties, and fry in a pan until golden and crispy on the outside. It makes a brilliant side dish, or even a hearty breakfast when topped with a runny egg.
